I have tried several methods but I find it difficult to get a really sharp edge on my blades. Some knives are easier to sharpen than others but all in all I rarely achieve that shaving sharp edge. How do you do it?

The Sharpmaker is very easy to user. The Lansky system is good once you set it up, there are preset angles but will take some time depending on the steel and angle you want to reprofile.
